Ruth Moore’s Grandmother’s Ginger Bread

Grandma Falba had two good friends that lived across the street from her in Twin Falls, Idaho. Ora Mae Sumner lived just directly across in a large brick house, and Ruth Moore lived next door to Ora Mae. Each day, one or the other would call to come over for coffee, conversation, to watch a daily serial, to keep each other company. They looked in on Grandma nearly every day.

Ruth Moore’s Grandmother’s Ginger Bread

1 c sugar
1/2 c butter
1 c molasses
1 c cold coffee
1 tsp soda
2 tsp cinnamon
2 tsp ginger
3 c flour

Cream sugar & butter together, add molasses. Mix soda & spices with sifted flour. Add flour & coffee alternately. Mix well. Pour into well-oiled pan. Bake at 375° for 35 min.

This recipe was handed down to Ruth by her grandmother. Ruth was much older than Grandma so it’s possible this recipe might go back as far as the mid-1800’s.
